As the darkness rolls in and overtakes more and more of our days, a certain slowness creeps into our days which is slightly unsettling at first, but gradually morphs into a certain sense of calm and quiet. Around 4 pm our bodies and minds are left to believe that the working day is over, and though we often find ourselves pushing on until late anyway, the pace is definitely slowing down from the summer season. Outside the landscape is turning more monochromatic, its wild and pure character even further enhanced by our slow moving Belties with their thick wintercoats, ruffled up and dotted with snowflakes. This is a landscape that invites to return to the essence, stripped off its summer clothing, its bare bones showing. Winter becomes a state of being. This year was a hard one, or maybe it was just an accumulated exhaustion of the years before, working hard and constantly dealing with the next challenge. Lots of challenges are still there, but with the fire inside on and nice food boiling on the stove, the winter is being a gentle ally allowing us some healing time before we step up the gears again. Our days remain busy, but the mood is different. Holly, with her infectious joyous nature, leaves speckles of Christmas cheer everywhere she passes. And Laurel and I are finding little pockets of time to do those winter activities that bring inner joy, such as cutting up wood and using it to heat our house and cook our meals, playing around with flavours as we try out new recipes, processing apples and Summer collected fruits out of the freezer. Winter can be hard, at moments slapping you down even literally, but we live the perspectives that we chose to see. I prefer to focus on the gifts that Winter brings, one of which also gratefulness. When we work so hard, when I find myself standing, exhausted and cold at a market, then there’s always many of you there, voicing their appreciation for our work, for our produce. As farmers, as supporters of wildlife, as food producers, we wouldn’t be able to do all this without you. So thank you, and I wish you all of the blessings of a beautiful Winter. There is no sunshine as beautiful as the one on a wintery morning.

Among our usual cuts and pies, there are also a few specials, such as our gammons (which I highly recommend) and our festive pies, such as Game Pheasant & Apricot, Wild Venison & Fig (my favourite), and Woodpigeon & Smoked Paprika. Perfect to cut up and serve as a festive sharing platter!!
