Geese

Our geese are raised on Wark Farm in the traditional way to produce an outstanding product full of flavour and succulence. Geese by nature are best suited to a free range life, not performing well if kept confined or grown on quickly.

It takes a full six months for our geese to reach maturity (in contrast to duck taking 8 weeks or a conventional turkey 16 weeks). Our geese graze on grass pasture and glean grain on stubbles. They make full use of the open fields they graze in, ranging widely and are a spectacular sight when in full flight across the field. In addition to their grass, they eat limited amounts of home produced grain and certified organic feed. At night they are brought into straw filled barns to keep them safe from predators, an enjoyable routine for the goose keeper as they are easily herded from field to shed.

 


 



 

Goose

For centuries goose has been the natural choice for the festive Christmas dinner. By custom the first goose of the season is eaten at Michaelmas (September 29th).

Often considered to be a fatty bird, a goose cooked well has a lower total fat content than beef or lamb. Some fat in meat is however also desirable to allow the flavour to be appreciated and maintain succulence and the fat in a goose has a relatively lower proportion of saturated fat and higher proportion of mono-unsaturated and essential fatty acids (source - British Goose Producers Association). Any surplus fat can easily be collected by roasting the bird on a rack and should be kept, as goose fat is superb for roasting potatoes and can easily be stored in the fridge or freezer. In fact goose fat is now being sold separately as a luxury food item in some supermarkets.

As our geese are definately seasonal birds, the fresh oven ready birds are only available in December but we are now taking orders for Christmas 2008.
